For a simple oatmeal cookie that is sure to please you have to try this recipe. When I first learned about it I was skeptical because I was thinking, “I don’t want crunchy dry oatmeal cookies, I may as well have crunchy granola.” Not that there is anything wrong with that but I wanted something SWEET and decisions. 

Well at my brother-in-law’s request I whipped up these oatmeal cookies and boy was I proven wrong! These were soft, chewy, moist (don’t hate me for using that word) and incredibly easy! These have been added to my go-to list! But don’t take my word for it, give them a try and see for yourself.

Glad you asked! You will need the following to make these amazingly soft and chewy oatmeal cookies:

 

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated (white) sugar
  • 1 cup brown sugar
  • eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour 
  • 1 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups uncooked oats
  • 1 cup nuts, chopped (optional)

So you’ve gathered your ingredients, I supposed you’re wondering what to do next…just go with your gut. Kidding! Here are your step by step instructions:

How to do this:

Step 1

Preheat the oven to 375F

Step 2

Cream butter and sugars until smooth; beat in eggs and vanilla.

Step 3

Combine and blend thoroughly flour, cinnamon, baking soda, and salt; beat into creamed mixture.

 

Step 4

Stir in oats.

Step 5

Drop by rounded teaspoonfuls onto greased baking sheet. Bake 10 to 12 minutes. Makes 6 dozen

Bake 10 to 12 minutes.
